Every year our family escapes to Louisville, Kentucky for a long weekend of food, family and fun. A few years ago on our long drive home, my husband admitted that his favorite part of heading down south was the chicken and waffles we always got at a hidden dinner off the beaten path (and secretly, I knew that was what brought me back year after year!).

In the past few years, we added two kids and ten food allergies (including my own adult allergies) Between all of our family’s dietary restrictions, I honestly thought that chicken and waffles was going to be out of the question for us in the future….. UNTIL I discovered Van’s® Gluten Free Waffles which are also egg free, dairy free, corn free and nut free. Van’s® Products check all the right boxes for our dietary restrictions.

A little creative thinking led me to the MOST delicious sweet and savory chicken and waffles, and my husband thinks they might be BETTER than the ones we loved in Louisville.

Gluten Free Waffles

The base of these delicious gluten free waffles, is well, the waffle! You simply lightly butter the waffle (dairy-free butter works well here too) and then place it right on top of the chicken to be air-fried for about 5 minutes. Air-fried waffles are OUT of this world good, and the perfect addition to these delish chicken and waffles.

Not only are these waffles delicious, but they are packed with REAL ingredients and are also Non-GMO project verified.

They’re created using whole grain brown rice flour (meaning they contain a whopping 21-23g of whole grains per serving, yassss!), and they’re naturally sweetened with fruit juice instead of tons of sugar. When cooked, they are the lightest, crispiest waffles ever, and make a great addition to my chicken and waffles recipe.

For breakfast or other recipes you can consider using Van’s® Gluten Free Blueberry Waffles or Van’s® Gluten Free Ancient Grains Waffles (which have tons of whole grains and fiber packed into each waffle).

Gluten Free “Breaded” Chicken?

What would chicken and waffles be without a crunchy chicken crust? Van’s® Gluten Free The Perfect 10® Crackers make for a tasty and (most importantly) a crispy chicken covering.

They’re gluten free, and baked with oats, brown rice, millet, quinoa and amaranth, giving them great natural flavor and 16g of whole grains per serving.

Chicken and Waffle Bites

This meal makes a great after school snack for the kiddos, or as a tasty starter before an evening meal.

All you need are a few ingredients such as chicken, Van’s® Gluten Free The Perfect 10® Crackers, Van’s® Original Gluten Free Waffles, unsweetened almond milk (or your favorite milk substitute), and an air fryer.

How To Make Gluten Free Chicken and Waffles

To make this recipe, you’re going to crush the crackers up into small pieces. You can use your food processor or you can place them in a small sandwich bag and crunch with your hands.

Cut the chicken into bite sized pieces and then season with salt and pepper. Then, dredge the chicken in a mixture of unsweetened almond milk and tabasco.

Then coat the chicken in the cracker crumbs by pressing it firmly on all sides.

Spray the chicken with cooking spray, then place into the air fryer at 375 for 6 minutes, then flip them and add the buttered waffles right on top of the chicken.

The waffles and chicken should come out nice and crispy. Cut up the waffles into bite sized pieces, and then place the cooked chicken bites on top of the waffle. Carefully insert a toothpick through the chicken and waffle.

I combine buffalo wing sauce with a few tablespoons of pure maple syrup. The maple syrup not only cuts down on the spiciness of the hot wing sauce, but they give the sauce some natural sweetness.

Ingredients

  • 1lb of chicken
  • 1/2 cup crushed Van’s Gluten Free The Perfect 10® Crackers
  • cooking spray
  • unsweetened almond milk (or any milk)
  • hot sauce
  • Van's Gluten Free Waffles (or any Van's waffle variety)
  • 1 tbsp butter
  • Salt and pepper
  • For the Sauce:
  • 1/3 cup Buffalo sauce
  • 3 tbsp Pure maple syrup
  • 1/8 tsp Garlic Powder

Instructions

    1. Dice chicken into bite size pieces and then season to taste with salt and pepper.
    2. Crush crackers in a food processor or reusable bag into small pieces, and pour onto a large plate.
    3. Combine unsweetened almond milk and a dash of tabasco into a small bowl.
    4. Dunk the chicken breast pieces first into the bowl of almond milk, and then transfer to the plate of cracker pieces and press chicken firmly into mixture coating all sides.
    5. Spray chicken pieces with cooking spray, and place into Air Fryer at 375 degrees. Set timer for 6 minutes.
    6. Lightly butter one side of Van's Waffles, and once chicken has cooked for 6 minutes, place the waffles right on top of the chicken bites. Set timer for an additional 4 minutes.
    7. Once time is complete, remove waffles and chicken pieces. Chicken should be thoroughly cooked and no longer pink.
    8. Cut the waffles into bite size pieces and place a chicken piece on top. Secure a toothpick through both the piece of chicken and the waffle.

    For the Sauce:
    1. Combine buffalo sauce, maple syrup and garlic powder.
