Congrats (hand clap emoji) you have officially found the BEST mayo-less coleslaw dressing EVER. It’s true you may never need another coleslaw or broccoli recipe ever again. I am THAT confident in this easy and delish broccoli salad. This vegan broccoli salad has all of the elements: sweet, rich, healthy (without tasting healthy) and is soooo so easy to throw together. It is instantly becoming the “Can I have that recipe,” recipe everywhere I go. The best part, is it comes together in minutes.
Mayo Free Broccoli Salad
So many side dishes are choc full with yummy creamy mayo, it just doesn’t work for our family. My daughter is allergic to eggs (hello mayo) and I am allergic to mustard (which is in most mayo). Whenever we need a side dish, we can’t just grab a tub of coleslaw or potato salad. I started experimenting with different ways to have the “creaminess,” without the mayo.
Sweet Slaw Without Sugar?!
The salad also needed sweetness. While so many side dishes call for a heaping spoon (or eight) of sugar, I wanted to use something a little more natural. In the past few years I have loved subbing sugar with maple syrup and the result is the sweetness without the guilt.
Broccoli Slaw Bag
Ain’t no one got time to sit in the kitchen and slice and dice and shred lettuce and cabbage and broccoli. I mean you absolutely COULD do that, but these days most grocery stores have a pre-packaged, pre-shredded bag of broccoli slaw that you can grab and go. Make sure the bag has a good mixture of carrots, broccoli and cabbage. I find mine at Trader Joes, Kroger or Meijer, etc.
How To Prepare Broccoli Salad
This broccoli slaw is embarrassingly easy to prepare. Simply dump the bag of broccoli slaw into a bowl (preferably with a lid). Add balsamic, olive oil, and maple syrup. Give the broccoli slaw a good stir. Then add garlic powder, salt, and pepper and stir. Lastly, place the lid on top and give the mixture one more large stir. You can refrigerate the slaw ahead of time. Also keeps overnight.
- 14 oz bag of shredded broccoli slaw
- 2 tbsp olive oil
- 2 tbsp balsamic
- 2 tbsp maple syrup
- 1/4 tsp salt
- 1/4 tsp garlic
- dash of pepper
- In a bowl with a lid dump in bag of broccoli slaw.
- Add remaining ingredients and stir well.
- Place lid on top and refrdigerate for at least 1 hour (prefereably 4-5 hours).
